Michael Symon is a celebrity chef from Cleveland, OH perhaps best known for his stint on Food Network’s “Iron Chef America.” (Symon has been an Iron Chef since winning the first season of “The Next Iron Chef” back in 2007.) Symon has several restaurants across the Midwest – from the upscale bistro Lola (his flagship restaurant in Cleveland) to his laid-back burger joint B Spot (with locations across the Midwest).
The ‘B’ in B Spot has multiple meanings – burgers, brats, beer, and bourbon. B Spot is apparently known for all four. Myself? I was there for the burgers.
Specifically, I went with Yo! which is a New York deli-inspired burger that won the SoBe Burger Bash back in 2011. (B Spot boasts three burgers that have won this title over the years – the Fat Doug, which won in both 2010 and 2014 and the Porky, which won in 2012.) Yo! is a beef burger topped with fried salami, capicola, banana peppers, provolone cheese, and Symon’s signature ShaSha Sauce (which is a banana pepper-based sauce named for Symon’s grandmother – you can find the recipe at FoodTV.com).
The meat mixture used for the burgers is pretty spectacular – equal parts sirloin, brisket, and short rib. The meat was perfectly cooked and, between that and the quality of the beef used, Yo! was a pretty incredible burger. Added to that quality beef were the great quality toppings – deli-style salami and capicola, fried on the griddle and topped with gooey melted provolone. The addition of banana peppers and the ShaSha sauce could have easily overwhelmed the flavor, but perhaps surprisingly, did nothing of the sort. This was a great burger!
A few points were deducted for bun choice. The fresh-baked brioche is always a good call for burgers, but the top of the bun was exceptionally thick, which threw off the precious meat-to-bun ratio that all burgers must balance well. Had more than a single slice each of the salami and capicola been added, this might’ve rectified that problem. However, as I finished the burger, I noticed that the juices from the burger had merged with the fat from the Italian meats to soak through the bottom bun, which to my thinking is a serious burger party foul! It didn’t completely disintegrate, but I did find myself rushing the last few bites I would’ve otherwise savored.
All that said, B Spot’s Yo! is everything that I expected and anticipated out of a burger crafted by an Iron Chef – imaginative, balanced, and, above all, delicious! My wife and I found the lard-fried onion rings to be a great compliment to our burgers (try them with the Coffee BBQ sauce!) and finished out our meal with a couple of the B Spot’s Bad A** Milkshakes. Be sure to make B Spot a go-to spot on your quest for a tasty burger!
